Audra’s Friday Night Dinners

Following the success of last month’s Friday Night Dinners, we can’t wait to let the lovely Audra Morrice loose in our Darlinghurst kitchen again. Her dinner on the 21st March will take us to China with some delicious sharing dishes.


Menu - Friday 21st March

prawn, pork, shiitake wontons, szechuan ginger dressing (vegetarian option available)

red braised pork belly – star anise, cinnamon, dark soy, rock sugar, dried chilli (vegetarian option – Szechuan style eggplant)

three pepper crispy chicken ribs – white, black and Szechuan peppers, smoked dried chilli (vegetarian option – three pepper crispy tofu,king mushrooms)

asian greens

sticky date pudding – burnt caramel, vanilla bean cream


$55 per person; seatings at 6.30pm and 8pm; booking essential,call ’02 9360 9631.

The perfect brew

Why would you manually brew coffee when pressing a button on a fancy automatic coffee-maker seems so much more state of the art? Well, Andy, our head barista and resident coffee geek put us all straight when he introduced us to the Aeropress. It seems impossible to brew a bad cup with it! This simply designed little gadget is made of two cylinders  - the chamber where you place the paper filter and coffee, and the plunger. Then all you need is his obsessive precision in achieving the perfect grind, ideal temperature and ultimate seeping time.  Luckily for us, Andy and his team have fallen in love with the technical wizardry of it all and the result is a rich, full-bodied coffee without bitterness or sediment.

Come to bills in March you’ll be in for the rare treat of trying the coffee from Mengaya, in the remote Aceh region of Sumatra. The growers have experimented with a new style of cherry processing which combines the traditional drying of the beans with the more modern washed style. The coffee is full-bodied and rich, with great acidity, and the added complexity of a juicy sweet, syrupy finish. It’s quite unusual and has even been described as having ‘gummy bear’ aromas (sounds crazy, but it’s true!) with flavours of cassis, cherry & pineapple. If only March could last all year!

Audra’s Friday Night Dinners

We are so excited to announce that Masterchef’s delightful Audra Morrice
will again be gracing our Darlinghurst kitchen as she kicks off our series
of Friday Night Dinners on Friday 21st February. The dinners will showcase
her unique style of cooking, bringing together the rich influences of her
Indian Chinese Singaporean heritage and also taking inspiration from recent
travels to Chiang Mai, Cambodia and Japan. With a focus on shared plates,
you’ll get a chance to enjoy her delicious spicy Szechuan dressing, crispy
spicy chicken wings and Lemak chicken curry.

As Audra says:  “To feast with our eyes, nose and hands is to truly enjoy. In
my mind, it’s the art of eating!” We look forward to feasting with you soon!

We are now taking bookings for 21st February, 21st March, 18th April, 16th May
and 13th June.

sang choi bao – thai green curry paste, chicken, kaffir lime, coriander,

We’re so excited about the new dishes on our summer dinner menu and
can’t wait to show them off to you. From our refreshing Hawaii-inspired
raw tuna, avocado and brown rice bowl with samphire and sesame to the
crispy pork belly and watermelon salad, packed with fragrant herbs and
cashews all tossed into a zingy dressing, there’s plenty to help you
cool down and relax into the evening.

And that’s just the beginning – 2014 promises to be a great year for
bills. We’ll keep you posted…

My latest book ‘Bill’s Italian Food’ first took shape during a family holiday to Puglia, in Southern Italy. It had been a busy year, working on menus and recipes for the opening of my London restaurant Granger & Co. I was so exhausted that for the first time in my life I felt I didn’t have it in me to cook another meal. But just like that, by the second day in our villa, my passion had been re-ignited. Seeing our Italian neighbour teaching the girls to make pasta, hearing the crackling of the logs in the pizza oven, it took no time at all for me to want to get back into the kitchen. It was then that I decided that I wanted to capture this passion for food Italy inspires in, and a cookbook came to life.

Italians certainly know how to live and at the heart of their lifestyle lies food. To them, food is about family, friends, relaxing together and enjoying life. Theirs is the relationship we should all have with eating and cooking, be it when throwing together an instant weekday meal, or while enjoying a long leisurely holiday lunch.

This book is all about that spirit, that love for simple, honest food that makes Italian food everybody’s favourite from London to Tokyo and Sydney to New York.
